Vegan Gluten-Free Pumpkin Pie for the Waistline

I was checking out my food items in my drawers earlier today and noticed that I had a can of pumpkin puree that will expire in about 5 months, which is still 2 months before Thanksgiving Day. I needed to make use it before it is no good and goes to waste so I baked a pumpkin pie today in the middle of spring!

I used this one recipe from Minimalist Baker that's vegan and gluten-free for last Thanksgiving and my older son liked it. I also enjoy it as I find that vegan recipes can be much better...

Vegan and Gluten-Free Vanilla Cake

This past year brought a lot of changes to our family's diet to improve a health condition. This year, I baked a vegan and gluten-free vanilla cake for my kid's birthday. The cake sunk in a bit in the middle after I took it out of the oven, but it's fully cooked. I think I should have left it in the oven a bit longer. Aesthetic aside, I'm happy with this cake.

Vegan Gluten-Free Pizza Crust

I'm making a vegan, gluten-free pizza crust for my son this morning and this time, I'm recording my recipe and what steps I took. I'm not using tomato sauce for this recipe to lower the acid for easier digestion for my little guy.

Ingredients:

Vegan Steel Cut Oatmeal with Coconut Milk

I had a lot of coconut milk leftover so I decided to make steel cut oatmeal with coconut milk and have some to save for the next few days for breakfast. I think it makes a delicious dessert too. This is vegan and gluten-free. It only requires 5 ingredients with an optional 6th ingredient.

Today, I tried a vegan and gluten free waffle recipe to use with my new Waffle Wow waffle maker Kawaii Snacks edition (Kawaii Fun Snacks Mini Waffle Maker - 7 Different Food Emoji Designs Featuring an Avocado, Pizza, Ramen, Taco & More) that I received as a Christmas gift this year by a family member. This year, Santa is going to be served vegan cookies.

2021 brought a lot of changes in our home: one of them is a family member started having health-related issues and we had to change and be mindful of what we bring to the dinner table.
